Chicken in Peanut (typical of Sub-Saharan Africa)

 Ingredients 

Peanut oil (or other cooking oil)
1 chicken (for the gourmet, from 4 to 6 chicken breasts) to be cut into pieces or serve as the only portion
Tomato paste "SALSA"
1 or 2 onions, chopped
1 or 2 cloves garlic, chopped (optional)
1 cup peanut butter (natural, or even better homemade
Water
Cayenne pepper or red pepper, black pepper
Salt

 Preparation 

Heat a few tablespoons of oil in a deep pot. Add the chicken and fry on both sides until it is cooked. Then remove the chicken and set aside. In the same pan fry onions and garlic and mix well the tomato paste. Boil for several minutes, reducing heat and then put the chicken in the pot adding the peanut butter. In order not to burn all sure you use a very low heat. Add water to make tomato paste and peanut butter sauce smooth. Add spices to taste, stir and cook until the chicken is ready.
